
Voyager Chorizo Breakfast Tacos

Ingredients (4 servings):
• 1 lb. Fresh Pork Chorizo
• 4 Eggs whisked
• 4 Fresh Corn Tortillas
• Fresh Oaxaca Cheese
• Fresh Cojita
• Fresh Guacamole
• Fresh Pickled Red Onion
• Fresh Cilantro
• Salt and Pepper
• Mild Voyager Jalapeño Pineapple Hot Sauce
Recipe:
1. Sear on high heat the oaxaca cheese underneath a corn tortilla until crispy. You should get crispy oaxaca cheese under the corn tortilla and set aside.
2. Cook pork chorizo in pan. While the pork chorizo is cooking, season the whisked eggs with salt and pepper and cook eggs. Remove eggs while they are of a slightly watery consistency (the key to great scrambled eggs is to remove them while still wet, they continue to cook once removed from pan).
3. Place scrambled eggs on top of a crispy cheese tortilla. Add crumbled pork chorizo on top of eggs.
4. Garnish with guacamole, crumbled cojita cheese, pickled red onion, chopped cilantro and our mild Jalapeño Pineapple Hot Sauce and enjoy!
