
Voyager Chicken Tortilla Soup

Ingredients:
• 1 Rotisserie Chicken (Shredded)
• 2 Tablespoons Olive Oil
• 7 Small Roma Tomatoes
• 6 Guajillo Chiles
• 1 Ancho Chile
• 1 1/4 Sweet Onions
• 1 1/4 Head of Garlic
• 2 Cartons of Chicken Broth
• 3 Bay Leaves
• Sea Salt
Toppings:
• Lime
• Crema
• Cilantro
• Avocado
• Tortilla Strips
Recipe:
1. Drizzle olive oil in a Dutch oven on high heat
2. Add and sear roma tomatoes, sweet onions, garlic, guajillo and ancho chille for 5 minutes
3. Add one carton of chicken broth to a blender with a pinch of salt and bay leaves
4. Add all ingredients from Dutch oven into blender and blend on high until a smooth consistency
5. Add all ingredients back into the Dutch oven with an additional carton of Kettle chicken broth
6. Mix in shredded rotisserie chicken and simmer covered for 10 minutes
7. Serve in bowl with toppings and enjoy!
